Chicken Quesadillas

Ingredients
  • 1 lb (454g) boneless, skinless chicken breasts, cut into 3/4 inch chunks
  • 1/2 cup (120mL) Mrs. Dash® Mesquite Grille 10-Minute Marinade
  • Non stick cooking spray
  • 1 10 oz. (280g) pkg. frozen corn kernels, thawed, drained
  • 1/2 cup (120mL) canned drained no salt added tomatoes* (1/2 cup chopped fresh plum tomatoes may replace the canned.
  • 6 (6 inch) whole wheat flour tortillas
  • 1 cup (240mL) reduced fat shredded cheddar cheese
  • 1/4 cup (60mL) chopped cilantro (optional)
Directions
  • 1. Marinate chicken in Mrs. Dash® Mesquite Grille 10-Minute Marinade. Remove chicken from marinade and discard the marinade.
  • 2. Heat a large nonstick skillet coated with cooking spray over medium-high heat. Add chicken; cook 4 minutes stirring occasionally. Add corn and tomatoes; continue cooking until chicken is cooked through, about 4 more minutes.
  • 3. Meanwhile, preheat broiler. Arrange tortillas on a large baking sheet or 2 cookie sheets. Spray lightly with cooking spray. Broil 5 to 6 inches from heat source until golden brown, 2 to 3 minutes. Turn tortillas over; top with chicken mixture, spreading to edges. Sprinkle cheese over tortillas. Broil until cheese melts, 2 to 3 minutes. Top with cilantro, if desired. Fold quesadillas in half; cut each in half to serve.
