Easy Vegetable Pot Pie

Ingredients
  • 4 sheets of phyllo or puff pastry
  • 2 Tbsp. olive oil, divided
  • 1 lb. frozen root vegetable medley (potatoes, turnip, carrot, onion)
  • 1/2 lb. fresh mushrooms cut in half
  • 10 oz. part skim ricotta
  • 3 tsp. Mrs. Dash® Original Blend, divided
Directions
  • 1. Preheat oven to 375° F. Choose four 1-1/2 to 2 cup baking bowls. Brush them with 1 Tbsp. olive oil. Cut phyllo dough into circles to fit bowls; set aside.
  • 2. Thaw the frozen vegetables in the refrigerator overnight. Drain and dry with paper towel.
  • 3. Toss the vegetables with the ricotta, mushrooms and 2 tsp. of Mrs. Dash® Original Blend.
  • 4. Pile into bake ware and top with phyllo dough circles. Brush with 1 tbsp. olive oil and sprinkle with remaining 1 tsp. Mrs. Dash®. Bake until evenly brown.
