Ingredients

  • 4 4Oz. (454g) skinless boneless chicken breast halves
  • 2 Tbsp. (30mL) Mrs. Dash® Chicken Grilling Blend™
  • 1 Tbsp. (15mL) olive oil
  • Dressing
  • 2 Tbsp. (30mL) fresh lemon juice
  • 1/2 tsp. (2.5mL) fresh pepper
  • 1/4 cup (60mL) fat free mayonnaise
  • 1 Tbsp. (15mL) Mrs. Dash® Chicken Grilling Blend™
  • Salad
  • 8 cups (1920mL) romaine lettuce, torn
  • 1/4 cup (60mL) Parmesan cheese, grated
  • 1/2 cup (120mL) unseasoned croutons
Directions
  • 1. Preheat George Forman Grill to medium high. Brush chicken on both sides with olive oil. Press 2 Tbsp. (30mL) Mrs. Dash® Chicken Grilling Blend™ into chicken breasts until well coated.
  • 2. Place chicken breasts on grill, close cover and grill 7 - 8 minutes or until chicken is cooked and juices run clear when pierced.
  • 3. Remove chicken from grill and cool. Cut into short strips; set aside.
  • 4. Combine lemon juice, mayonnaise, pepper and 1 Tbsp. (15mL) Mrs. Dash® Chicken Grilling Blend™. Let stand while chicken is cooking.
  • 5. Place lettuce in large bowl. Toss with dressing; garnish with Parmesan cheese and croutons. Place chicken strips on top and serve.
