Grilled Chicken with Spicy Corn & Black Beans

Ingredients
  • 3 Tbsp. (45mL) Mrs. Dash® Extra Spicy Seasoning Blend, divided
  • 4 (1 lb) (454g) boneless, skinless chicken breast halves
  • 1 cup (240mL) canned black beans, rinsed and drained
  • 1 cup (240mL) frozen yellow corn, cooked, cooled
  • 1 cup (240mL) chopped red bell pepper
  • 1/4 cup (60mL) red onion, chopped fine
  • 1/2 cup (120mL) fresh cilantro, chopped fine
  • 2 Tbsp. (30mL) fresh lime juice
Directions
  • 1. Prepare salsa mixture at least one hour before grilling chicken.Combine 2 Tbsp. (30mL) Mrs. Dash Extra Spicy, black beans, yellow corn, pepper, red onion, cilantro, and fresh lime juice until well blended. Refrigerate, stirring once or twice.
  • 2. Preheat grill to medium high.
  • 3. Place 1 Tbsp. (15mL) Mrs. Dash® Extra Spicy and chicken in a plastic bag; shake until well coated.
  • 4. Grill 5 minutes.
  • 5. Turn and cook 5 minutes, or until juices run clear when pierced.
  • 6. Serve hot with salsa spooned over each piece of chicken.
