Lemon New Potato Salad

Ingredients
  • 4 Tbsp. (60mL) Mrs. Dash® Lemon Herb Peppercorn Marinade
  • 1 lb (679g) medium red potatoes
  • 1/2 cup (125mL) nonfat yogurt
  • 2 Tbsp. (30mL) sweet pickle relish
  • 1 cup (250 mL) diced celery
  • 1/2 cup (125 mL) diced sweet red peppers
  • 1 Tbsp. (15mL) chopped parsley
Directions
  • 1. Cook potatoes in large pot of boiling water 12-15 minutes, until tender. Drain and rinse potatoes in cold water.
  • 2. Meanwhile, combine Mrs. Dash® Lemon Herb Peppercorn Marinade, yogurt, and relish and in a small bowl.
  • 3. Combine cooled potatoes, celery, and red peppers in a large bowl.
  • 4. Add Mrs. Dash® Lemon Herb Peppercorn Marinade, yogurt, relish and parsley and toss to coat. Refrigerate overnight or until ready to serve. (May be prepared a day in advance).
