Ingredients
  • 2 1/2 Tablespoons (37.5mL) Mrs. Dash® Extra Spicy Seasoning Blend
  • 2 19 oz. (540mL) cans red kidney beans
  • 3 Tablespoons (45mL) vegetable oil
  • 1 1/2 cups (370mL) cheddar cheese, grated
  • 1/2 cup (120mL) sour cream
Directions
  • 1. Drain kidney beans, save liquid. Heat oil in skillet, turn off heat, add beans and mash with potato masher. Add 1/3 cup (80mL) of bean liquid.
  • 2. Stir in cheese and Mrs. Dash® Extra Spicy Seasoning Blend. Cook over medium heat, stirring constantly, until cheese is melted. Stir in sour cream.
  • 3. If mixture is too thick, thin to desired consistency with more bean liquid.
  • 4. Serve hot with corn chips.
