2 tablespoons Mrs. Dash® Garlic & Herb Seasoning Blend, divided

1 tablespoon olive oil

4-6 boneless, skinless chicken thighs

1 small onion, chopped fine

2 cups frozen mixed vegetables, thawed

1/2 cup low sodium chicken broth
-
1/2 cup water
-
1 cup white rice, uncooked
-
2 tablespoons reduced fat sour cream
-
2 tablespoons grated parmesan & romano cheese blend
- Directions

1. Heat oil in large non-stick skillet over medium high heat. Season chicken with 1 tablespoon Mrs. Dash® Garlic & Herb Seasoning Blend, then add chicken to skillet.

2. Cook chicken 5 minutes on each side or until cooked through. Remove chicken and keep warm.

3. Add onions to skillet and cook until tender. Stir in remaining tablespoon of Mrs. Dash®, vegetables, chicken broth and water. Bring to a boil.

4. Stir in white rice. Cover and remove from heat. Let stand 5 minutes, or until liquid is absorbed.

5. Add sour cream and cheese; stir to blend. Serve topped with chicken.
