Red Beans & Smoked Turkey

Ingredients
  • 1 Tbsp. (15mL) Mrs. Dash® Extra Spicy Seasoning Blend
  • 1 lb (500g) dried red beans
  • 1/2 cup (120mL) chopped celery
  • 1 cup (120mL) chopped onion
  • 1 Qt. (1L) cold water
  • 1 lb (500g) smoked turkey wing (1 medium wing) or drumstick
  • 3 cups (750mL) rice
Directions
  • 1. Sort and wash beans.
  • 2. Place beans in 4 Qt. (3L) Dutch oven; cover with water 2 inches above beans.
  • 3. Soak for 30 minutes or overnight. Drain.
  • 4. Add celery, onion, Mrs. Dash® Extra Spicy Seasoning Blend, turkey wing and water to a 4 Qt. (3L) Dutch oven. Bring mixture to a boil.
  • 5. Reduce heat; cover, cook over low heat 2 to 3 hours or until beans and turkey are tender.
  • 6. Remove turkey wing; cut meat from bone; mix meat into beans.
  • 7. Cook rice.
  • 8. Toss rice with 1 Tbsp. (15mL) Mrs. Dash® Extra Spicy if extra spice is desired.

I think the chopped celery should be added towards the end of the cooking time or else it will cook out. This dish was delicious and healthy. I'm looking forward to preparing it again.

I didn't have the seasonings that were called for but I did have the Mrs. Dash steak seasoning and I used that -- it was very good! (And I don't usually like red beans).
