Potato Salad Recipe
A must-have for the Memorial Day weekend. Make this your signature dish that they'll keep asking for - classic style with hard-boiled eggs, relish and celery. It's all flavored with the good taste of Mrs. Dash® Table Blend.
Ingredients:
- 7 medium potatoes
- 2 large eggs, hard-boiled
- 3 Tbsp. (45mL) onion, finely chopped
- 3 Tbsp. (45mL) green pepper, finely chopped
- 1/2 cup (120mL) celery, chopped
- 1/4 cup (60mL) sweet pickle relish
- 1/2 cup (120mL) light mayonnaise
- 2 Tbsp. (30mL) mustard
- 1 1/2 Tbsp. (22.5mL) white wine vinegar
- 1 Tbsp. (15mL) Mrs. Dash® Table Blend
Directions:
- Place potatoes in saucepan with water to cover. Bring to a boil and simmer 20 minutes or until tender.
- Cool, cube, and place potatoes in large salad bowl.
- Chop hard-boiled eggs and add to potatoes with onion, green pepper, celery, and sweet relish.
- Make dressing by combining remaining ingredients.
- Pour over vegetables and toss well.
- Dust salad with Mrs. Dash® Table Blend.
