Bookmark and Share Lemon Rice Pilaf Recipe

Mrs. Dash® Lemon Herb Peppercorn 10-Minute Marinade adds zing to a traditional rice pilaf, and it’s perfect served with our Herb Peppercorn Tilapia.
Ingredients:
  • 3 Tbsp. (45mL) Mrs. Dash® Lemon Herb Peppercorn Marinade
  • 1 cup (240mL) water
  • 1/2 medium onion, chopped (for about 1/2 cup (120mL)
  • 2 cups (480mL) quick-cooking (5 minute) rice
  • 1/2 cup (120mL) frozen green peas
  • 1/2 cup (120mL) frozen cut corn
  • 1 tsp canola or olive oil
Directions:
  1. Heat the oil over medium high heat in a 1 quart or larger saucepan with a lid. Peel and coarsely chop the onion and add it to the pan. Stir and cook for 3 minutes or until onion starts to brown on the edges. Add water and raise the heat to high. Cover the saucepan and bring the water to a boil.
  2. When the water boils, add the rice, frozen vegetables and the marinade to the pan. Stir well, cover and reduce heat to low.
  3. Simmer for 5 minutes or until liquid is absorbed and rice is tender. Serve immediately or cover, remove from the heat and let rest for up to 15 minutes.
