Cherry Tomato and Watermelon Salad Recipe
Whether you grow them in your backyard or buy a basket at the farmers' market, fresh tomatoes offer a bounty of nutrition benefits. Pair with cool, juicy watermelon but skip the salt. Sprinkle with Mrs. Dash® Fiesta Lime Seasoning Blend for a for a Mexi-licious slice of exciting summer flavor.
Ingredients:
- 1 Tbsp. Mrs. Dash® Fiesta Lime Seasoning Blend
- 1 pint cherry tomatoes cut in half
- 1 1/2 cups 1 inch cubed yellow or red seedless watermelon peeled, cut into 2 inch cubes
- 1 avocado, cleaned and cut into 3/4 inch cubes
- 1 cucumber, peeled, seeded and cut into halves, then into 1/2 inch pieces
- 1 Tbsp. each fresh tarragon, basil, cilantro chopped coarsely
- 2 Tbsp. olive oil, extra virgin if possible
- 3 Tbsp. balsamic vinegar
Directions:
- Lightly toss all ingredients including Mrs. Dash® Fiesta Lime in medium size bowl.
- Rest in refrigerator for 30 minutes for flavors to marry.
- Spoon into four bowls, adding remaining juices over the top of the salad ingredients.
