Potato Pancakes Recipe
Ingredients:
- 2 Tbsp. (30mL) Mrs. Dash® Original Blend
- 2 medium russet potatoes, peeled, grated, squeezed of excess liquid
- 2 scallions, chopped into 1/4 inch pieces, white and green
- 2 Tbsp. olive oil
- cooking spray
Directions:
- Toss potatoes, scallions and Mrs. Dash® Original Blend in a bowl.
- Heat a 6 inch sauté pan to medium, spray with cooking spray and add potato mixture in small 3 inch round patties.
- Drizzle 1 Tbsp. olive oil around potato patties. Cook over even heat on 1 side until nicely brown, about 4 minutes.
- Turn, drizzle in remaining olive oil and cook another 3-4 minutes until nicely brown.

This recipe was easy to make and a great companion with a pork roast. Our family is German and potatoe pancakes are a favorite.
