Stir Fry with Chicken and Vegetables Recipe
Ingredients:
- 1 Tbsp. (15mL) olive oil
- 1 lb (454g) boneless chicken, cut into bite-sized pieces
- 2 Tbsp. (30mL) Mrs. Dash® Onion & Herb Seasoning Blend, divided
- 12 Oz. (336g) frozen stir fry vegetables
- 1/2 cup (120mL) low sodium chicken broth
- 2 tsp (10mL) low sodium soy sauce
- 2 tsp (10mL) sesame oil
- 2 tsp (10mL) cornstarch
- 2 cups (480mL) hot cooked rice
- For extra spice, add fresh, red chili pepper slivers before serving.
Directions:
- Heat olive oil in a large nonstick skillet.
- Add chicken and 1 Tbsp. (15mL) Mrs. Dash® Onion & Herb Seasoning Blend. Cook over medium heat until chicken is tender and no longer pink in the center (about 4 minutes); stir often.
- Add frozen vegetables; cover. Heat over medium-high heat until vegetables are heated through (about 5 minutes).
- Meanwhile, combine chicken broth, 1 Tbsp. (15mL) Mrs. Dash® Onion & Herb Seasoning Blend, soy sauce, cornstarch and sesame oil.
- Add to chicken and vegetable mixture; stir well until sauce thickens (about 1 to 2 minutes. Serve over cooked rice.
