Chicken with Tomato Citrus Salsa Recipe
Introduce a kid-friendly salsa that transforms the humble chicken into a sweet and zippy family favorite. The bright, fresh flavors of mango and tomato become something slightly exotic when flavored with Mrs. Dash® Tomato Basil Garlic Seasoning Blend.
Ingredients:
- 1/4 cup (60mL) Mrs. Dash® Tomato Basil Garlic Seasoning Blend
- 1 lb (454g) boneless, skinless chicken breasts
- 2 Tbsp. (30mL) Filippo Berio® Extra Virgin Olive Oil
- 2 cups (480mL) steamed white rice
- Mango Salsa
- 1 ripe mango, skinned, seeded then diced in 1/4 inch (.6cm) cubes
- 2 Roma tomatoes, seeded and diced into 1/4 inch (.6cm) cubes
- 1/4 cup (60mL) lightly packed cilantro, chopped, stems removed before measuring
- 2 Tbsp. (30mL) lime juice
Directions:
- Coat chicken breasts with Mrs. Dash® Tomato Basil Garlic.
- Heat Filippo Berio ® Extra Virgin Olive Oil in a pan.
- Add chicken breasts to pan and sauté until cooked through, approximately 5 minutes per side or until chicken reaches 170º (77º C).
- Combine all remaining ingredients in a bowl and toss.
- Place chicken on bed of rice and spoon Mango Salsa over top.
- Serve immediately.
