Chicken with Tomato Citrus Salsa

Ingredients:
  • 1/4 cup (60mL) Mrs. Dash® Tomato Basil Garlic Seasoning Blend
  • 1 lb (454g) boneless, skinless chicken breasts
  • 2 Tbsp. (30mL) olive oil
  • 2 cups (480mL) steamed white rice
  • Mango Salsa
  • 1 ripe mango, skinned, seeded then diced in 1/4 inch (.6cm) cubes
  • 2 Roma tomatoes, seeded and diced into 1/4 inch (.6cm) cubes
  • 1/4 cup (60mL) lightly packed cilantro, chopped, stems removed before measuring
  • 2 Tbsp. (30mL) lime juice
Directions:
  1. Coat chicken breasts with Mrs. Dash® Tomato Basil Garlic.
  2. Heat oil in pan.
  3. Saute chicken breasts in olive oil until cooked through, approximately 5 minutes per side or until chicken reaches 170°F (77°C).
  4. Combine all remaining ingredients in a bowl and toss.
  5. Place chicken on bed of rice and spoon Mango Salsa over top.
  6. Serve immediately.
