Chicken Pomodoro with Artichokes

Ingredients:
  • 4 Oz. (125g) whole wheat rigatoni pasta
  • 8 Oz (225g) boneless, skinless chicken breast, cut into 1/2 inch (1.25cm) squares
  • 6 1/2 Oz. (196g) jar of marinated artichokes, rinsed, drained, reserving 1 Tablespoon marinade
  • 2/3 cup (160mL) chopped, seeded fresh tomato
  • 2 tsp (10mL) Mrs. Dash® Garlic & Herb Seasoning
  • 2 Tbsp. (30mL) grated Romano cheese
  • 1 tsp (5mL) olive oil
Directions:
  1. Cook pasta according to package directions; rinse and drain.
  2. Meanwhile, saute chicken pieces in olive oil about 4 minutes or until brown.
  3. Combine artichokes, tomato, Mrs. Dash® Garlic & Herb, and reserved marinade in large skillet.
  4. Heat over medium heat, stirring constantly, 1 to 2 minutes or until heated through.
  5. Combine pasta, chicken and vegetables
  6. Sprinkle with grated cheese
