Chicken Salsa Salad
Ingredients:
- 5 tsp (25mL) Mrs. Dash® Chicken Grilling Blend?, divided
- 4 boneless skinless chicken breast halves (about 1 lb) (454g)
- 1/4 cup (60mL) chunky salsa
- 1/4 cup (60mL) light mayonnaise
- 1 cup (240mL) frozen whole kernel corn
- 1 cup (240mL) chopped green bell pepper
- 10 Oz. (280g) package of salad greens
Directions:
- Preheat broiler or grill.
- Coat each chicken breast half with 1 tsp (5mL) Mrs. Dash® Chicken Grilling Blend?.
- Cook 5 to 6 minutes.
- Turn and cook another 5 or 6 minutes until chicken juices run clear. Remove and let cool.
- Combine salsa, mayonnaise and remaining Mrs. Dash Chicken® Grilling Blend?.
- Cut cooked chicken into bite-sized pieces.
- Cook corn, drain and combine with bell pepper.
- Divide salad greens equally between four plates, top with chicken mixture.
- Spoon salsa mixture over each salad and serve.
