Twice Baked Sweet Potatoes Recipe
Ingredients:
- 1 tsp (5mL) Mrs. Dash® Table Blend
- 4 tsp (20mL) Molly McButter® Natural Butter Sprinkles
- 2 medium sweet potatoes, washed and pierced with fork
- 1/2 of a small ripe banana, peeled
- 2 Tbsp. (30mL) orange juice
- 1 Tbsp. (15mL) brown sugar
- 1/4 cup (60mL) chopped pecans
Directions:
- Preheat oven to 350°F (180°C).
- Microwave sweet potatoes on HIGH about 15 minutes until centers are soft and tender.
- Cut into halves lengthwise.
- Scoop out sweet potato from shell; reserve shells.
- Combine sweet potato with banana in medium bowl; mix well with potato masher.
- Add Molly NcButter® Natural Butter Sprinkles, orange juice, brown sugar and Mrs. Dash® Table Blend; mix well until smooth.
- Spoon mixture into shells.
- Sprinkle with pecans.
- Bake on baking sheet 10 to 15 minutes, or until heated through.
