Herbed Stuffed Cherry Tomatoes Recipe
Ingredients:
- 1 Tbsp. (15mL) Mrs. Dash® Garlic & Herb Seasoning Blend
- 1 tsp (5mL) Mrs. Dash® Extra Spicy Seasoning Blend
- 1/3 cup (80mL) 1% low-fat cottage cheese
- 1/4 cup (60mL) feta cheese, crumbled
- 1 Tbsp. (15mL) green onions, thinly sliced
- 16 cherry tomatoes
Directions:
- Cut thin slice off bottom of each tomato.
- Scoop out pulp with small end of melon baller, discard pulp.
- Invert tomatoes on paper towels to drain.
- Combine cottage cheese, feta cheese, green onion, and Mrs. Dash® seasonings in a small bowl.
- Mix well.
- Spoon into tomatoes.
- Display on a bed of lettuce.
- Can be made ahead and refrigerated for up to 8 hours.
