Clam Stuffed Mushrooms

Bookmark and Share Clam Stuffed Mushrooms Recipe

Ingredients:
  • 1 tsp (5mL ) Mrs. Dash® Garlic and Herb Seasoning Blend
  • 1 tsp (5mL) Mrs. Dash® Lemon Pepper Seasoning Blend
  • 6 large (2 1/2-3 inch) (6.25-7.5cm) stuffing mushrooms
  • 4 Tbsp. (60mL) canned minced clams, drained and rinsed
  • 1 tsp (5mL) butter, unsalted
  • 2 Tbsp. (30mL) dried breadcrumbs
  • 1 Tbsp. (15mL) fresh parsley, minced
  • 1 Tbsp. (15mL) water
  • olive oil spray
Directions:
  1. Remove stems from mushrooms and dice.
  2. Spray tops of mushrooms with olive oil spray and place on cookie sheet.
  3. Pat clams dry.
  4. Melt butter in skillet, add mushroom stems and Mrs. Dash® Garlic and Herb, saute over medium heat until tender.
  5. Add clams, breadcrumbs, parsley and approximately 1 Tbsp. (15mL) water to moisten.
  6. Preheat broiler.
  7. Fill mushroom caps with clam mixture, sprinkle with Mrs. Dash® Lemon Pepper, place under preheated broiler and cook 6 inch (15cm) from broiler for 8 minutes or until browned and hot, being careful not to burn.
  8. Serve immediately.
