Bookmark and Share Potato Salad with Sun Dried Tomatoes Recipe

Ingredients:
  • 1 Tbsp. (15mL) Mrs. Dash® Table Blend
  • 1 1/2 lb (679g) small new red potatoes
  • 1/3 cup (80mL) chopped sun dried tomatoes, drained
  • 3 Tbsp. (45mL) balsamic vinegar
  • 2 Tbsp. (30mL) olive oil
  • 3 Tbsp. (45mL) chopped green onions
Directions:
  1. Cook potatoes in large pot of boiling water 12 to 15 minutes, until tender when pierced with a fork.
  2. Drain and rinse potatoes in cold running water.
  3. Meanwhile, combine sundried tomatoes, vinegar, olive oil and Mrs. Dash® Table Blend in small bowl; mix well.
  4. Combine potatoes and green onions in large bowl.
  5. Add dressing and toss to coat.
  6. Refrigerate until ready to serve.

I sprinkled 1 tablespoon of feta cheese on top of it when I put on the plate. Very good, I will make this again.
