Potato Salad with Sun Dried Tomatoes Recipe
Ingredients:
- 1 Tbsp. (15mL) Mrs. Dash® Table Blend
- 1 1/2 lb (679g) small new red potatoes
- 1/3 cup (80mL) chopped sun dried tomatoes, drained
- 3 Tbsp. (45mL) balsamic vinegar
- 2 Tbsp. (30mL) olive oil
- 3 Tbsp. (45mL) chopped green onions
Directions:
- Cook potatoes in large pot of boiling water 12 to 15 minutes, until tender when pierced with a fork.
- Drain and rinse potatoes in cold running water.
- Meanwhile, combine sundried tomatoes, vinegar, olive oil and Mrs. Dash® Table Blend in small bowl; mix well.
- Combine potatoes and green onions in large bowl.
- Add dressing and toss to coat.
- Refrigerate until ready to serve.

I sprinkled 1 tablespoon of feta cheese on top of it when I put on the plate. Very good, I will make this again.
