Bookmark and Share Tequila-Marinated Pork Tenderloin Burrito Recipe

Take the stress out of entertaining by marinating a pork tenderloin in the morning, and grill it when the guests arrive. Wrap the tortillas in foil and lay on top of the barbecue to warm while the tenderloin is cooking. Serve the fixins’ buffet style so everyone can make their own.
Ingredients:
  • 1/4 cup (60mL) freshly squeezed lime juice
  • 1/4 cup (60mL) freshly squeezed orange juice
  • 1/4 cup (60mL) tequila
  • 2 Tbsp. (30mL) Mrs. Dash® Steak Grilling Blend
  • 1 lb (454g) pork tenderloin (whole)
  • 1 cup (240mL) *Holy Guacamole
  • 1 cup (240mL) *Tomato Salsa Fresca
  • 1/2 cup (120mL) low-fat, low-sodium cheddar cheese, grated
  • 4 8 inch flour tortillas

Directions:
  1. Place lime juice, orange juice, Mrs. Dash® Steak Grilling Blend, tequila and the pork tenderloin in a resealable storage bag.
  2. Squeeze out all the air and seal.
  3. Marinate in the refrigerator for 2 to 4 hours.
  4. Remove tenderloin and discard marinade.
  5. Cook the tenderloin on a grill or under a broiler for approximately 9 minutes per side, or until cooked throughout. If you have a meat thermometer, it should read 140°F (60°C) in the center of the thickest section. Allow meat to rest for 10 minutes before slicing.
  6. Wrap tortillas in foil and warm in oven at 300°F (150°C)for 10 minutes.
  7. Slice tenderloin into thin slices, then place the tenderloin, guacamole, salsa and cheese in individual bowls and set them out along with tortillas. Guests should be invited to assemble their own burritos.
