Chicken Lollipops

Chicken Lollipops

Ingredients:
  • 16 Oz chicken tenders, about 1 lb (454g)
  • 2 Tbsp. (30mL)Mrs. Dash® Table Blend
  • 1 cup (240mL) flour
  • 2 eggs
  • 1 cup (240mL) bread crumbs (coarse if available)
  • 1/3 cup (80mL) grated Parmesan cheese
  • 4 Tbsp. (60mL) Mrs. Dash® Classic Italiano Seasoning Blend
  • 2 Tbsp. (30mL) butter
  • 4 Tbsp. (60mL) fresh squeezed lemon juice
  • 1 Tbsp. (15mL) Mrs. Dash® Lemon Pepper Seasoning Blend
  • 12 bamboo skewers, 10 inches long (25cm)
Directions:
  1. Carefully cut the white tendon from the meat with a sharp knife, and discard.
  2. Rinse chicken and pat dry, sprinkle with Mrs. Dash® Table Blend.
  3. In three separate bowls place: (bowl #1) flour, (bowl #2) beaten egg , (bowl #3) breadcrumbs, Parmesan, and Mrs. Dash® Classic Italiano. Line the three bowls in a row.
  4. Roll chicken in flour, dip in egg until well soaked, and then roll in breadcrumb mixture until well covered.
  5. Melt butter in a frying pan over medium-high heat. Add breaded chicken when butter begins to sizzle.
  6. Cook for approximately 3 minutes on the first side, or until golden brown. Turn once and cook for approximately 2 more minutes, or until golden brown on outside and cooked throughout (if uncertain of doneness, make an incision to insure that no pink remains).
  7. Remove chicken from pan. Add lemon juice and Mrs. Dash® Lemon Pepper to drippings. Stir for a few seconds to loosen up brown bits. Drizzle over chicken.
  8. Insert skewer in the center of the wide end of the chicken tender, and push all the way through to the other end.
