Pineapple Chicken Kabobs Recipe
Ingredients:
- 1 Tbsp. (15mL) Mrs. Dash® Extra Spicy Seasoning Blend
- 1 Tbsp. (15mL) Mrs. Dash® Chicken Grilling Blend™
- 2 (6 Oz.) (168g) boneless, skinless chicken breasts, cut into 1 inch cubes
- 1/4 cup (60mL) canola oil, divided
- 1 1/2 Tbsp. (22.5mL) freshly squeezed lime juice
- 2 Tbsp. (30mL) finely grated fresh ginger
- 1 cup (240mL) canned pineapple chunks, water packed
- 8 green onions, bottom 2 inches (5cm) only, cut into 1 inch (2.5cm) long pieces
- 1 red bell pepper, stem and seeds removed, cut into 1 inch (2.5cm) squares
- 4 bamboo skewers, 12 inches (30cm) long
Directions:
- Place chicken in a re-sealable storage bag. Add 2 Tbsp. (30mL) oil, lime juice, ginger and Mrs. Dash® Extra Spicy, squeeze out air and seal bag.
- Massage bag so that seasonings coat chicken evenly. Marinate in the refrigerator for 1 hour.
- Soak bamboo skewers in water while chicken is marinating.
- Remove chicken and discard marinade. Season chicken with Mrs. Dash® Chicken Grilling Blend™. Assemble kabobs, alternating pieces of chicken, bell pepper, pineapple and green onion. Brush with remaining oil.
- Grill or broil for 6 minutes, turning skewer over and grilling on other side for additional 6 minutes or until chicken is cooked throughout.
- Serve over steamed white rice if desired.
