Grilled Chicken Greek Salad Recipe
Ingredients:
- 2 Tbsp. (30mL) olive oil
- 1 Tbsp. (15mL) red wine vinegar
- 2 tsp (10mL) lemon juice
- 1 Tbsp. (15mL) Mrs. Dash® Garlic and Herb Seasoning Blend
- 1 Tbsp. (15mL) fresh parsley
- 8 Oz. (250g) boneless, skinless chicken breast halves
- 1 Tbsp. (15mL) Mrs. Dash® Chicken Grilling Blend™
- 1 medium red onion
- 1 each of medium red, yellow and green pepper
- 1 large tomato
- 4 baby lettuce leaves for garnish
- olive oil spray
- 8 slices cucumber
- 1/4 cup (60mL) feta cheese, crumbled
- 1/4 cup (60mL) sliced black olives
Directions:
- Chop parsley finely. Combine olive oil, red wine vinegar, lemon juice, Mrs. Dash® Garlic and Herb and parsley to make dressing. Set aside.
- Preheat grill to medium high.
- Spray chicken breasts with olive oil spray and pat 1/2 Tbsp. (7mL) Mrs. Dash® Grilling Blend™ into each breast.
- Grill chicken breast 5 to 6 minutes per side, remove and set aside.
- Cut red onion into four slices. Cut each of the peppers into four wedges. Cut tomato into four rounds 1/2 inch (1.2cm) thick. Place onions, peppers, and tomatoes into large bowl, spray with olive oil spray.
- Grill vegetables into a grill basket for 10 to 12 minutes or until lightly charred and tender. Set aside.
- Place baby lettuce on large platter.
- Toss vegetables with dressing and place on greens.
- Cut chicken breasts into slivers and lay on top of vegetables with cucumber slices, feta cheese and black olives.
