Ingredients:
  • 3 Tbsp. (45mL) Mrs. Dash® Extra Spicy Seasoning Blend
  • 1 Tbsp. (15mL) Mrs. Dash® Garlic and Herb Seasoning Blend
  • 1 Tbsp. (15mL) canola oil
  • 1 large onion
  • 8 Oz. (225g) extra firm tofu
  • 1 tsp. (5mL) cumin
  • 1 28 Oz. (784mL) can diced tomatoes without salt
  • 15.5 Oz. (433mL) can kidney beans, drained and rinsed
  • 1 medium jalapeno pepper, seeded and finely minced
  • 1/2 cup (120mL) fresh cilantro, chopped
  • 6 Tbsp. (90mL) fat free sour cream
  • 6 Tbsp. (90mL) grated cheddar cheese
Directions:
  1. Chop onion.
  2. Cut tofu into 1/2" (1.25cm) cubes.
  3. Heat oil in a large saucepan over medium high heat. Add the onion and saute for 3 minutes.
  4. Add Mrs. Dash® Garlic and Herb Seasoning Blend and tofu. Saute until the mixture colors lightly, about 2 minutes.
  5. Stir in Mrs. Dash® Extra Spicy Seasoning Blend and cumin; cook until the seasonings are aromatic, about 1 minute. Add tomatoes, kidney beans, jalapeno and cilantro. Simmer uncovered, until the chili is thick, about 10 minutes.
  6. Serve in large bowls garnished with sour cream and cheddar cheese.

Great recipe. Made it twice now. Second time - forgot to get tofu.. substituted with chicken breast....still a great recipe.
