Pasta Salad with Tomatoes and Grilled Salmon Recipe
Ingredients:
- 3 Tbsp. (45mL) Mrs. Dash® Garlic & Herb Seasoning Blend, divided
- 12 oz (336g) whole grain penne pasta
- 1 roasted red pepper, peeled and diced
- 2 roasted yellow peppers, peeled and diced
- 1 pint cherry tomatoes, halved, yellow if possible
- 2 medium tomatoes, seeded and diced
- 1 large cucumber, seeded and diced
- 1 Tbsp. (15mL) olive oil
- 3 Tbsp. (45mL) lemon juice
- 2 Tbsp. (30mL) low sodium chicken broth
- 8 4 oz (1kg) salmon fillets
Directions:
- Cook pasta according to package directions. Set aside.
- Combine olive oil, 2 Tbsp. Mrs. Dash® Garlic & Herb Seasoning Blend, lemon juice and broth in a large bowl. Add prepared vegetables and pasta, toss well and chill.
- When ready to serve, brush salmon fillets with a little olive oil and sprinkle with 1 Tbsp. Mrs. Dash® Garlic & Herb Seasoning Blend.
- Grill fillets 3 - 4 minutes per side on medium heat. Serve hot with pasta salad.

A new and delicious way to cook Salmon and pasta too. I will be making this again for sure! And it is also low in calories!
