New England Salmon Cakes
Ingredients:
- 1 can 7.5 Oz. (213g) low sodium sockeye salmon, drained
- 1 cup (240mL) mashed potatoes
- 1 cup (240mL) frozen peas
- 1 egg, lightly beaten
- 1 green onion, sliced
- 2 Tbsp. (30mL) Mrs. Dash® Chicken Grilling Blend™
- 2 Tbsp. (30mL) all-purpose flour
- 2 tsp (10mL) unsalted butter
Directions:
- Mix together all ingredients except flour and butter. Mix well and form into 6 patties.
- Place flour on a plate and dredge patties in flour.
- Over medium heat, melt butter and add patties. Saute evenly on both sides until nicely browned, about 5 minutes per side.
- Serve as an appetizer or as a main course with broccoli.
