Brown Rice and Barley

Ingredients:
  • 1 cup (240mL) raw brown rice
  • 1/2 cup (120mL) pearl barley
  • 1 tsp. (5mL) olive oil
  • 1/3 cup (80mL) finely chopped onion
  • 1 clove garlic, minced
  • 1 1/2 Tbsp. (22.5mL) fresh lime juice
  • 1 1/2 Tbsp. (22.5mL) Mrs. Dash® Extra Spicy Seasoning Blend
  • 1/2 cup (120mL) dried cranberries
  • 1 Tbsp. (15mL) butter
Directions:
  1. Cook the brown rice and barley in water for 40 minutes, according to package directions.
  2. Heat olive oil in small skillet, add onion and garlic and saute until tender.
  3. Combine brown rice, barley, onion mixture, lime juice, Mrs. Dash® Extra Spicy Seasoning Blend, dried cranberries, and butter. Serve warm.
