Southwest Chipotle Seasoning Blend

Bookmark and Share Creamy Chipotle Chicken with Onions Recipe

Ingredients:
  • 2 Tbsp. (30mL) Mrs. Dash® Chipotle Seasoning Blend
  • 8 boneless, skinless chicken thighs
  • 1 cup (240mL) low fat sour cream
  • 1 cup (240mL) onions, chopped into 1/8" slices
Directions:
  1. Remove any excess fat from chicken thighs. Place chicken into an oven proof casserole, sprayed with cooking spray.
  2. Mix sour cream, onions and Mrs. Dash® Chipotle Seasoning Blend together. Pour over the chicken and make sure the chicken is well coated with mixture.
  3. Bake in 375°F preheated oven for 30 minutes, or until juices run clear.

I have had to cook for my Dad who has been placed on a low sodium diet. I made this for him and our family and they all loved it. I will definitely make this again.

Really good! I baked it for longer so the onions got a little soft, but everyone loved it!
