Lemon New Potato Salad Recipe
A healthy low-sodium version of the traditional family favorite with a lemony, tangy twist. With a few simple ingredient changes, this creamy salad will become a new and healthier favorite. Just keep it in a bowl over ice during the cookout.
Ingredients:
- 4 Tbsp. (60mL) Mrs. Dash® Lemon Herb Peppercorn Marinade
- 1 lb (679g) medium red potatoes
- 1/2 cup (125mL) nonfat yogurt
- 2 Tbsp. (30mL) sweet pickle relish
- 1 cup (250 mL) diced celery
- 1/2 cup (125 mL) diced sweet red peppers
- 1 Tbsp. (15mL) chopped parsley
Directions:
- Cook potatoes in large pot of boiling water 12-15 minutes, until tender. Drain and rinse potatoes in cold water.
- Meanwhile, combine Mrs. Dash® Lemon Herb Peppercorn Marinade, yogurt, and relish and in a small bowl.
- Combine cooled potatoes, celery, and red peppers in a large bowl.
- Add Mrs. Dash® Lemon Herb Peppercorn Marinade, yogurt, relish and parsley and toss to coat. Refrigerate overnight or until ready to serve. (May be prepared a day in advance).

Used less Mrs. Dash marinade ~~ very tasty!
