Southwestern Chipotle 10-minute Marinade

A zesty meal made with NEW Mrs. Dash® Southwest Chipotle Seasoning Blend and topped with a corn relish made with raisins, onion, and sweet bell peppers is perfect for any summer cookout.
Ingredients:
  • 4/4oz (569g) boneless, skinless chicken breasts
  • 1/2 cup (120mL) Mrs. Dash® Southwest Chipotle 10-Minute Marinade + 3 Tbsp. (45mL) for corn relish
  • 1/2 cup (120mL) raisins
  • 4 Tbsp. (60mL) orange juice
  • 1 tsp. (5mL) olive oil
  • 1/2 cup (120mL) diced onions
  • 1 cup (240 mL) frozen cut corn
  • 1 large green sweet bell pepper, diced
Directions:
  1. Place chicken breasts in plastic bag, add 1/2 cup (120mL) Mrs. Dash® Southwest Chipotle 10-Minute Marinade and coat completely. Leave in bag for 10 minutes.
  2. Soak raisins in orange juice for 10 minutes.
  3. Meanwhile, heat olive oil in a heavy skillet over medium heat. Add onions and sauté until soft, add corn and diced peppers and cook for five minutes. Add raisins with orange juice, 3 Tbsp. (45mL) Mrs. Dash® Southwest Chipotle 10-Minute Marinade and stir well. Cover, and set mixture aside.
  4. Heat grill, place chicken on grill and cook 3 minutes per side. Chicken is cooked when juices run clear.
