Zesty Grilled Chicken Sandwiches
Ingredients:
- 4 (4oz). (115g) boneless, skinless chicken breasts
- 1 1/2 cups (360mL) Mrs. Dash® Zesty Garlic Herb 10-Minute Marinade + 2 Tbsp. (30mL) for dressing
- 1 medium sweet red bell pepper (119g) seeded and sliced into 1? slices
- 4 Tbsp. (60g) fat free mayonnaise dressing
- 4 (1oz) (21g) slices reduced fat swiss cheese
- 4 lettuce leaves
- 4 whole wheat hamburger buns
Directions:
- Marinate chicken in 3/4 cup (180mL) Mrs. Dash® Zesty Garlic Herb 10-Minute Marinade for at least ten minutes. Marinate sliced peppers separately in 1/2 cup (120mL) of Mrs. Dash® Zesty Garlic Herb 10-Minute Marinade for at least 10 minutes.
- To make the dressing, add remaining 2 Tbsp. (30mL) Mrs. Dash® Zesty Garlic Herb 10- Minute Marinade to 4 Tbsp. (60g) fat free mayonnaise. Stir to blend.
- Remove chicken and peppers from Marinade, discarding Marinade. Place chicken and peppers on preheated grill, cooking chicken 3-4 minutes per side (or until cooked through) and peppers for for 1-2 minutes per side. Baste with 2 Tbsp. Mrs. Dash® Zesty Garlic Herb 10-Minute Marinade.
- Top each grilled chicken breast with a slice of cheese, then a grilled red pepper strip and lettuce. Place chicken on a hamburger bun that has been spread with 1 1/2 Tbsp. (22g) of dressing.
