Mesquite Grill 10-minute Marinade

Bookmark and Share Chicken Quesadillas Recipe

Use this healthy chicken recipe to add some zesty flavor to your healthy cooking routine. Chunk leftover chicken and marinate in Mrs. Dash® Mesquite Grille Marinade for about ten minutes. Meanwhile, warm canned corn and tomatoes on the stovetop. Top warmed tortillas with chicken and veggie mixture and broil.
Ingredients:
  • 1 lb (454g) boneless, skinless chicken breasts, cut into 3/4 inch chunks
  • 1/2 cup (120mL) Mrs. Dash® Mesquite Grille 10-Minute Marinade
  • Non stick cooking spray
  • 1 10 oz. (280g) pkg. frozen corn kernels, thawed, drained
  • 1/2 cup (120mL) canned drained no salt added tomatoes* (1/2 cup chopped fresh plum tomatoes may replace the canned.
  • 6 (6 inch) whole wheat flour tortillas
  • 1 cup (240mL) reduced fat shredded cheddar cheese
  • 1/4 cup (60mL) chopped cilantro (optional)
Directions:
  1. Marinate chicken in Mrs. Dash® Mesquite Grille 10-Minute Marinade. Remove chicken from marinade and discard the marinade.
  2. Heat a large nonstick skillet coated with cooking spray over medium-high heat. Add chicken; cook 4 minutes stirring occasionally. Add corn and tomatoes; continue cooking until chicken is cooked through, about 4 more minutes.
  3. Meanwhile, preheat broiler. Arrange tortillas on a large baking sheet or 2 cookie sheets. Spray lightly with cooking spray. Broil 5 to 6 inches from heat source until golden brown, 2 to 3 minutes. Turn tortillas over; top with chicken mixture, spreading to edges. Sprinkle cheese over tortillas. Broil until cheese melts, 2 to 3 minutes. Top with cilantro, if desired. Fold quesadillas in half; cut each in half to serve.
