Baja Steak Tostada

A robust garlic-herb marinade featuring Mrs. Dash® Southwest Chipotle Seasoning Blend is the secret to these zesty Tex-Mex tostadas.

Ingredients

  • Avocado
  • Shredded lettuce
  • Fresh cilantro
  • 1 c. rinsed and drained black beans
  • 1 tbsp. Southwest Chipotle Seasoning Blend
  • 2 tbsp. lime juice, divided
  • 8 5-inch yellow corn tortillas
  • 1 lb. boneless shell steak or flat iron steak
  • 1 c. corn
  • 2 tbsp. vegetable oil (divided), plus more for frying

Directions

  1. Combine 1 tablespoon each Southwest Chipotle Seasoning Blend, vegetable oil and lime juice.
  2. Brush mixture on both sides of steak.
  3. Marinate in refrigerator 3 hours to overnight.
  4. Combine beans, corn, remaining teaspoon seasoning, 1 tablespoon oil and 1 tablespoon lime juice in medium bowl. Refrigerate until ready to use. 
  5. Heat about 1 inch of vegetable oil in small skillet over medium heat.
  6. Add tortillas, one at a time, and fry 1 to 2 minutes, turning once, until tortillas are crisp and golden.
  7. Drain tortillas on paper towels. Grill or broil steak to desired doneness.
  8. Slice steak and serve on tortillas with bean and corn mixture.
  9. Top with avocado, lettuce and cilantro, if desired.
