Caribbean Shrimp Bruschetta

Bruschetta heads to the Caribbean with this island-inspired recipe. Thinly sliced French bread topped with tomato, mushroom, basil and Mrs. Dash®-seasoned shrimp and bacon creates a delightful and tasty appetizer.

Ingredients

  • 3 tbsp. Caribbean Citrus Seasoning Blend
  • 12 large shrimp, cooked
  • 6 tomatoes, seeded and diced
  • 1 tbsp. balsamic vinegar
  • ½ thinly sliced radicchio
  • ½ c. freshly sliced green onions
  • 3 slices bacon, cooked and chopped
  • 12 pieces thinly sliced French bread
  • ½ c. button mushrooms
  • 2 oz. extra-virgin olive oil

Directions

  1. Mix olive oil and 1/2 tablespoon Caribbean Citrus Seasoning Blend.
  2. Drizzle olive oil mixture over bread and lightly toast in the oven.
  3. In a large bowl, combine tomatoes and balsamic vinegar.
  4. In a large skillet, sauté onion and cook until caramelized over medium-high heat.
  5. Add radicchio, mushrooms and 2 tablespoons Caribbean Citrus Blend. Cook until radicchio has wilted and mushrooms have released their liquid.
  6. Add cooked bacon and stir to combine.
  7. Remove from heat and allow to cool completely.
  8. Fold the cooled, cooked onion-bacon mixture into the tomato mixture.
  9. Add the chopped cilantro and green onions.
  10. Quarter the cooked shrimp (about 1/2-inch pieces) and add to the tomato mixture.
  11. Top each toasted bread slice with tomato mixture and serve.
