Chili Spiced Pork, Rice & Beans

The only thing better than the flavor in this dish is the fact that it cooks all in one skillet, so cleanup's a breeze!

Ingredients

  • 1 small onion, chopped
  • 2 ½ c. water
  • 1 small red pepper, chopped
  • 2 tbsp. canola oil, divided
  • 4 boneless, 1-inch-thick pork chops
  • 1 pkg. Chili Seasoning Mix
  • 1 c. rice
  • 15 oz. can black beans, rinsed and drained

Directions

  1. Heat 1 tablespoon oil over medium-high heat and cook pork chops 6 minutes, turning once; remove.
  2. Add remaining 1 tablespoon oil and cook onion and pepper over medium heat for 3 minutes.
  3. Stir in remaining ingredients and bring to a boil.
  4. Place pork chops on rice mixture, cover and simmer 20 minutes* or until rice is tender.
  5. Let stand 5 minutes.
  6. * For thinner chops or if you like your chops slightly pink, add chops to skillet with 10 to 15 minutes left on the timer.
