Crispy Chicken Tenders

Ingredients

  • 1 c. plain, unseasoned breadcrumbs, preferably whole grain
  • 4 tsp. Table Blend
  • 1 tbsp. nutritional yeast (optional)
  • 1 egg
  • 1 egg white
  • 1 ½ tbsp. tablespoons light mayonnaise
  • 1 ½ lb. skinless, boneless chicken tenders

Directions

  1. Preheat the oven to 450°F. Mist two baking sheets with oil spray and set aside.
  2. In a large bowl stir together the breadcrumbs, optional nutritional yeast, and Dash seasoning blend until well combined.
  3. In a small bowl whisk the egg, egg white, and light mayonnaise until well blended.
  4. One at a time, dip the chicken tenders into the egg mixture, dripping off any excess egg, then place in the bread crumb mixture (pat to coat on all sides with the breading). Place the tenders on the baking sheets and mist the tops with oil spray.
  5. Bake for 15 to 20 minutes (cooking time will vary, depending upon the size of your chicken), or until the breading is golden brown and crispy and the chicken reaches an internal temperature of 165˚. Serve immediately.
