Fiesta Chicken and Rice

Celebrate National Chicken and Rice Month with this lower-fat meal. Use a fabulous flavoring duo: prepared mild salsa and Mrs. Dash® Extra Spicy Seasoning Blend.

Ingredients

  • 3 tsp. Extra Spicy Seasoning Blend
  • 1 ¼ lb. boneless, skinless chicken breasts
  • 2 ¼ c. reduced-sodium chicken broth
  • 1 c. long-grain white rice
  • ½ c. shredded reduced-fat cheddar-jack cheese
  • 1 ½ c. mild chunky salsa

Directions

  1. Bring 2 cups of the broth to a boil in a medium saucepan over high heat.
  2. Stir in the rice and 1 teaspoon of the Extra Spicy Seasoning Blend.
  3. Reduce heat to medium-low, cover and simmer 12 to 15 minutes or until liquid is absorbed.
  4. Sprinkle remaining 2 teaspoons Extra Spicy Seasoning Blend over chicken.
  5. Coat a nonstick ovenproof skillet with cooking spray and heat over medium-high heat.
  6. When smoking hot, add the chicken and cook until lightly browned all over, 3 to 4 minutes per side.
  7. Pour salsa over and around chicken, shaking pan to evenly distribute.
  8. Cover, reduce heat to medium-low, and simmer until chicken is just slightly pink in center (about 150 degrees on an instant-read thermometer), 8 to 10 minutes.
  9. Remove chicken to a plate and stir cooked rice and remaining 1/4 cup of chicken broth into salsa pan.
  10. Put chicken over rice and sprinkle with cheese.
  11. Cover and bake in a preheated 350-degree oven until cheese melts and chicken is no longer pink in center (160 degrees), 6 to 8 minutes.
