Greek Rice

A perfect side for your next Greek-inspired dinner. Sprinkle with Mrs. Dash® Lemon Pepper Seasoning Blend for light and lemony taste.

Ingredients

  • 2 tbsp. olive oil
  • ¼ c. chopped onion
  • 2 c. low-sodium chicken broth
  • 1 tbsp. chopped fresh mint
  • 1 tbsp. Lemon Pepper Seasoning Blend
  • 1 c. long-grain rice
  • 4 oz. feta cheese

Directions

  1. Cook onion in hot oil until tender, but not brown, in a large saucepan.
  2. Add uncooked rice; cook and stir for 1 minute.
  3. Slowly add chicken broth.
  4. Bring to a boil and reduce heat.
  5. Cover and simmer for 15 to 20 minutes or until rice is tender and liquid absorbed.
  6. Crumble feta cheese.
  7. Stir in feta, Lemon Pepper Seasoning Blend and mint.
  8. Serve warm.
