Grilled Garlic Lime Chicken With Summer Squash

An easy grilling recipe that's healthy and oh-so-tasty. Simply marinate with Mrs. Dash® and grill to unlock a summertime flavor.

Ingredients

  • 1 medium red onion, thickly sliced
  • 2 medium yellow squash, thickly sliced
  • 2 medium zucchini, thickly sliced
  • 4 boneless, skinless chicken breast halves
  • 1 ½ c. Lime Garlic Marinade

Directions

  1. Marinate chicken in 3/4 cup of the Lime Garlic Marinade for at least 10 minutes.
  2. Separately, marinate vegetables in 1/2 cup Lime Garlic Marinade for at least 10 minutes.
  3. Preheat grill to medium-high heat.
  4. Remove chicken breasts from marinade, discarding marinade.
  5. Grill chicken 5 to 6 minutes per side or until chicken is cooked through, brushing with remaining 1/4 cup fresh marinade.
  6. Remove squash and onion from marinade; discard marinade.
  7. Grill vegetables 4 to 5 minutes per side.
  8. Serve each chicken breast with sliced vegetables.
