Grilled Vegetable Kabobs With Cherry Tomatoes

Gather all of the great summer vegetables — zucchini, peppers and tomatoes — for a handy snack on a stick. Skewer the chopped vegetables and brush with olive oil and Chicken Grilling Blend, then grill until tender-crisp.

Ingredients

  • 2 tbsp. Chicken Grilling Blend
  • 2 small zucchini, cut into 1/2-inch pieces
  • 2 tbsp. olive oil
  • 1 red pepper, seeded and cut into 1/2-inch pieces
  • 1 small red onion, cut into wedges
  • 8 white button mushrooms, cleaned
  • 16 cherry tomatoes
  • 8 metal or bamboo skewers

Directions

  1. If using bamboo skewers, soak in cold water for a few hours.
  2. Divide all the vegetables evenly into eight portions.
  3. Thread skewers with zucchini, cherry tomato, mushroom, red onion and red pepper.
  4. Brush vegetables with olive oil.
  5. Sprinkle both sides of kabobs with Chicken Grilling Blend.
  6. Preheat grill to medium high.
  7. Lay skewers on grill and cook, turning until the vegetables are nicely grill marked and tender-crisp, 4 to 5 minutes per side.
  8. Transfer kabobs to a large platter and serve immediately.
