Italian Chicken Dinner

Make weeknight dinners quick, easy and tasty with this Italian-inspired chicken dish.

Ingredients

  • 4 tsp. divided olive oil
  • 12 small new red potatoes, cut into 1/2-inch cubes
  • 2 c. shredded carrots
  • 1 lb. skinless chicken breast halves
  • 3 tbsp. Italian Medley Seasoning Blend
  • 3 tbsp. grated Parmesan cheese

Directions

  1. Preheat oven to 400 degrees.
  2. Combine Parmesan cheese and Italian Medley Seasoning Blend in shallow dish.
  3. Spray chicken breasts with cooking spray.
  4. Roll chicken in cheese mixture to coat, pressing lightly into chicken.
  5. Place each chicken breast on a 12-inch-square double thickness of aluminum foil.
  6. Place 1/2 cup carrots and 1/4 of the potatoes around each chicken breast.
  7. Drizzle each with 1 teaspoon olive oil.
  8. Sprinkle with remaining cheese mixture.
  9. Seal foil securely.
  10. Bake 20 minutes.
  11. Open foil packet and continue baking 5 to 10 minutes longer or until chicken and potatoes are tender.
  12. Serve immediately.
  13. Note: Foil packet may also be cooked on the grill. Cook on covered grill over indirect medium heat for 25 to 30 minutes or until chicken and potatoes are tender, turning once halfway through cooking time.
