Mediterranean Roasted Cod

Ingredients

  • 4 cod filets, about 6 oz each
  • 4 tsp. Original Blend
  • 4 thin slices lemon, seeds removed
  • 1 pint cherry tomatoes
  • ½ c. sliced red onion
  • 6 oz. capers, drained and rinsed
  • ¼ c. pitted Kalamata olives, halved
  • 2 garlic cloves, minced
  • 3 tbsp. olive oil
  • 4-6 fresh basil leaves, chopped
  • Lemon wedges, for serving

Directions

  1. Preheat oven to 400 degrees F.
  2. Spray a 9x13 baking dish with cooking oil and place cod filets inside.
  3. Season both sides with Dash™ Salt Free Original seasoning. Top each fish filet with one lemon slice.
  4. Scatter the tomatoes, onion, capers, and olives over and around the fish. Sprinkle garlic evenly over vegetables and fish. Drizzle all ingredients with olive oil.
  5. Bake 15 minutes, or until cod is no longer opaque and flakes easily with a fork. Top with fresh basil and serve with lemon wedges.
