Red and Green Bell Pepper Bites

Add this fun and festive healthy nibble to the buffet table. Reduced-fat cream cheese is flavored with Mrs. Dash® Lemon Pepper Seasoning Blend, then piped into crunchy cuts of red and green bell peppers. Almonds add a delightful surprise.

Ingredients

  • 1 medium green bell pepper, seeded and sliced in half lengthwise, then cut into six pieces
  • 1 tsp. fresh lemon juice
  • 4 oz. fat-free or reduced-fat cream cheese, softened
  • 1 medium red bell pepper, seeded and sliced in half lengthwise, then cut into six pieces
  • 1 tsp. Lemon Pepper Seasoning Blend
  • ¼ c. sliced almonds

Directions

  1. Arrange the green and red bell pepper pieces with the skin side down on a decorative serving platter.
  2. Dry roast the almonds in a medium skillet over medium heat for 3 to 4 minutes or until golden brown, stirring occasionally.
  3. Transfer 1 tablespoon of the almonds to a small plate and reserve for garnishing.
  4. Process the remaining almonds in a food processor or blender for 15 to 20 seconds, or until finely ground.
  5. In a medium mixing bowl, beat the cream cheese, Lemon Pepper Seasoning Blend and lemon juice with an electric mixer for 1 to 2 minutes, or until creamy.
  6. Add the ground almonds and beat for 10 seconds, or until combined.
  7. Spoon the mixture into a piping bag fitted with a wide star or round tip.
  8. Or snip the corner off a resealable plastic bag (a plastic freezer bag works well) and squeeze in the almond mixture.
  9. Pipe about 1 teaspoon of the mixture onto each bell pepper piece.
  10. Garnish with the reserved almonds.
