Ingredients

  • 2 peeled cloves garlic
  • 5 plum tomatoes, halved
  • 1 tsp olive oil
  • 2 tbsp Extra Spicy Seasoning Blend
  • 4 oz grated Monterey Jack cheese
  • 1 large jalapeo, cut in half, top and seeds removed
  • 1/2 cup white onions, sliced 1/4-inch thick
  • 2 tsp cider vinegar
  • 4 oz reduced-fat cream cheese

Directions

  1. Preheat oven to 425 degrees.
  2. Place plum tomatoes, jalapeño halves, white onions and garlic in a large bowl.
  3. Toss with olive oil, spread on baking sheet and roast until tender and charred around the edges, about 20 minutes.
  4. Place all vegetables into food processor or blender.
  5. Process until finely chopped.
  6. Place in a bowl and add Extra Spicy Seasoning Blend and cider vinegar.
  7. Mix together cream cheese and grated Monterey Jack cheese and place in an ovenproof dish, mounding it in the middle.
  8. Pour salsa around cheese and bake for 20 minutes or until cheese is bubbly.
  9. Serve hot with corn chips.
