Savory Chicken & Rice Skillet

A hearty rice and chicken dish is topped with Mrs. Dash® and seasoned to perfection.

Ingredients

  • 1 small onion, chopped fine
  • 1 tbsp. olive oil
  • ½ c. water
  • 2 c. frozen mixed vegetables, thawed
  • 41370 boneless, skinless chicken thighs
  • ½ c. low-sodium chicken broth
  • 1 c. uncooked white rice
  • 2 tbsp. Garlic & Herb Seasoning Blend
  • 2 tbsp. reduced-fat sour cream
  • 2 tbsp. grated Parmesan & Romano cheese blend

Directions

  1. Heat oil in large nonstick skillet over medium-high heat.
  2. Season chicken with 1 tablespoon Garlic & Herb Seasoning Blend, then add chicken to skillet.
  3. Cook chicken 5 minutes on each side or until cooked through.
  4. Remove chicken and keep warm.
  5. Add onions to skillet and cook until tender.
  6. Stir in remaining tablespoon of Garlic & Herb Seasoning Blend, vegetables, chicken broth and water.
  7. Bring to a boil.
  8. Stir in white rice.
  9. Cover and remove from heat.
  10. Let stand 5 minutes, or until liquid is absorbed.
  11. Add sour cream and cheese; stir to blend.
  12. Serve topped with chicken.
