Sole Vera Cruz

Sole Vera Cruz is a delicious way to enjoy your favorite fillet. It's seasoned with Dash™ and garnished with sliced Spanish olives for a powerful kick.

Ingredients

  • ¼ c. clam juice
  • 1 tbsp. olive oil
  • 1 finely chopped large shallot
  • 1 tbsp. tomato paste
  • 4 tsp. Tomato Basil Garlic Seasoning Blend
  • 2 tbsp. sliced Spanish olives
  • 1 lb. fresh sole or firm white fish

Directions

  1. Heat oil in a large nonstick skillet over medium heat.
  2. Add shallots and cook for 1 minute.
  3. Add sole and sprinkle with 2 teaspoons Tomato Basil Garlic Seasoning Blend.
  4. Cook over medium heat for 3 minutes; turn fish over and sprinkle with remaining Tomato Basil Garlic Seasoning Blend.
  5. Cook for 2 to 3 more minutes or until fish flakes easily with a fork.
  6. Remove from skillet and keep warm.
  7. Add clam juice and tomato paste to juices in skillet.
  8. Cook and stir over high heat until mixture comes to boil; continue to boil and stir for 1 minute.
  9. Stir in olives and pour over sole.
  10. Serve immediately.
