Ingredients

  • 2 tbsp chopped fresh cilantro or parsley
  • 1/4 cup finely chopped onion
  • 1 tbsp Extra Spicy Seasoning Blend
  • 1/2 lime, juiced
  • 1 tbsp extra-virgin olive oil
  • 11 oz can corn with peppers, drained
  • 2 lb top round London broil, about 2 inches thick
  • 2 tbsp Steak Grilling Blend
  • 15 oz can black beans, rinsed and drained

Directions

  1. Fire up the grill — preferably charcoal — to medium hot.
  2. Meanwhile, mix everything but the steak and Steak Grilling Blend in a bowl. Set aside the bowl at room temperature.
  3. Coat the steak all over with cooking spray.
  4. Rub in the Steak Grilling Blend on both sides.
  5. When the grill rack is hot, put the steak on the grill and close the lid (with vents open).
  6. Grill the steak, turning once, until it’s done the way you like, 5 to 7 minutes per side for medium rare (145 degrees on an instant-read thermometer) or 6 to 8 minutes per side for medium (160 degrees on an instant-read thermometer).
  7. Let the meat rest off the heat for 10 minutes, then slice thinly crosswise (across the grain).
  8. Serve with the Tex-Mex bean mix.
