Vegetables With Peppers & Parmesan

Full of good-for-you ingredients, this colorful side is a perfect addition to marinated chicken breasts. Don't forget to add the Tomato Basil Garlic Seasoning Blend and Parmesan cheese to enhance the natural flavors of the veggies.

Ingredients

  • 2 tbsp. olive oil
  • 1 small cauliflower, cut into florets
  • 13 c. chopped green onion
  • 1 large red bell pepper, cut into thin strips
  • 2 tbsp. Tomato Basil Garlic Seasoning Blend
  • 1 large green bell pepper, cut into thin strips
  • 2 c. cherry tomatoes
  • 4 tbsp. Parmesan cheese

Directions

  1. Bring a large saucepan of water to a boil.
  2. Add cauliflower and cook until crisp-tender, about 5 minutes; drain.
  3. In a large skillet, add oil and heat to medium high.
  4. Add peppers and cook, stirring until crisp-tender, about 2 minutes.
  5. Add cauliflower, Tomato Basil Garlic Seasoning Blend, cherry tomatoes and green onion.
  6. Cook for 2 more minutes or until vegetables are heated through.
  7. Place in a heated bowl and sprinkle with Parmesan cheese.
  8. Serve hot.
