White Bean Salad

Choose ripe cherry tomatoes and just-picked peppers for this special summer salad. Flavor the vegetables with Extra Spicy Seasoning Blend, add white cannellini beans and you're in for a delicious, healthy summer salad.

Ingredients

  • 2 tbsp. divided olive oil
  • 1 tbsp. Extra Spicy Seasoning Blend
  • 15 oz. can cannellini (white) beans
  • ¼ c. minced Italian parsley
  • 1 pt. cherry tomatoes
  • 1 medium yellow pepper, seeded

Directions

  1. Preheat oven to 375 degrees.
  2. Drain and rinse the cannellini beans.
  3. Spray roasting pan with vegetable oil spray.
  4. Cut peppers into thin strips and combine with tomatoes, Extra Spicy Seasoning Blend and 1 tablespoon olive oil.
  5. Roast vegetables for 25 minutes, remove from heat and place in bowl.
  6. Add beans and remaining olive oil.
  7. Toss and serve at room temperature.
